Savory Chicken Fettuccine Bake

12 oz fettuccine pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup bell peppers, diced (red and yellow for color)

1 cup spinach leaves, roughly chopped

1 can (15 oz) diced tomatoes, drained

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ teaspoon salt (or to taste)

½ teaspoon black pepper

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh basil, for garnish (optional)

Instructions
 

Cook the Fettuccine: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until softened and translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Chicken and Veggies: Add the shredded chicken, diced bell peppers, and chopped spinach to the skillet. Stir them together and cook for about 3-4 minutes until the veggies start to soften.

        Build the Flavor: Pour in the diced tomatoes, heavy cream, and chicken broth. Stir well to combine. Season with Italian seasoning, salt, and black pepper. Bring the mixture to a gentle simmer.

          Combine with Pasta: In the skillet, add the cooked fettuccine and half of the Parmesan cheese. Toss everything together until the pasta is well coated in the sauce.

            Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Spoon the pasta mixture into a greased 9x13-inch baking dish.

              Top It Off: Sprinkle the remaining Parmesan cheese and the shredded mozzarella evenly over the top of the fettuccine bake.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired, serve warm, and enjoy!
