Savory Breakfast Tacos with Chorizo

8 oz fresh chorizo sausage, casings removed

6 large eggs

1 tablespoon milk or cream

1/2 cup diced bell peppers (red, green, or a mix)

1/4 cup diced onion

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup fresh spinach or kale, chopped

1 avocado, sliced

1/2 cup crumbled queso fresco or feta cheese

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Hot sauce, to taste

Instructions
 

Cook the Chorizo: In a large skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula, until it’s browned and crispy. Transfer the cooked chorizo to a plate lined with paper towels to drain excess fat.

    Sauté the Veggies: In the same skillet, add the diced onions and bell peppers. Sauté for 3-4 minutes, or until they are softened. Push the veggies to one side of the skillet.

      Prepare the Eggs: In a bowl, whisk together the eggs, milk or cream, salt, and pepper. Pour the egg mixture into the empty side of the skillet. Cook, stirring occasionally until the eggs are just set, about 3-4 minutes.

        Combine: Return the chorizo to the skillet and gently stir to combine with the eggs and veggies. Add chopped spinach or kale and cook for an additional minute until wilted.

          Heat the Tortillas: While the egg mixture is cooking, heat the tortillas in a separate pan over medium heat for about 30 seconds on each side until warmed and slightly crispy.

            Assemble the Tacos: On each tortilla, spoon a generous portion of the chorizo and egg mixture. Top with avocado slices, crumbled queso fresco, and fresh cilantro. Add a drizzle of hot sauce if desired.
