Ingredients

4 large flour tortillas

6 large eggs

1 cup cooked and crumbled chorizo (or one protein of your choice)

1 cup diced bell peppers (red and green)

½ cup diced onions

½ cup shredded cheese (cheddar or Mexican blend)

1 avocado, sliced

¼ cup fresh cilantro, chopped

½ teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Salsa or hot sauce, for serving

Instructions

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers. Sauté for about 5 minutes, or until softened.

Cook the Chorizo: Push the veggies to one side of the skillet. Add the crumbled chorizo (or your chosen protein) to the empty side and cook for another 5–7 minutes until browned and cooked through.

Scramble the Eggs: In a bowl, whisk together the eggs, cumin, smoked paprika, salt, and pepper. Pour the egg mixture into the skillet over the chorizo and veggies. Allow to sit for a minute, then gently stir until the eggs are fully cooked, about 3–4 minutes. Remove from heat.

Assemble the Burritos: Lay one tortilla flat on a clean surface. Spoon about ¼ of the egg mixture into the center of the tortilla. Top with cheese, avocado slices, and a sprinkle of fresh cilantro.

Wrap It Up: Fold in the sides of the tortilla and roll it up tightly from the bottom to the top, making sure to keep the filling secure.

Optional Toasting: In a clean skillet, add a little olive oil over medium heat. Place the wrapped burrito seam-side down in the skillet. Cook for 2–3 minutes on each side until golden brown and crispy.

Serve: Slice the burrito in half and serve warm with salsa or hot sauce on the side.
