Ingredients
  

1 lb smoked sausage, sliced (such as Andouille or Kielbasa)

1 cup long-grain rice

1 medium onion, diced

1 green bell pepper, diced

2 celery stalks, chopped

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

3 cups chicken broth

2 tsp Cajun seasoning

1 tsp dried thyme

1/2 tsp cayenne pepper (adjust to taste)

2 bay leaves

1 cup frozen okra, sliced (optional)

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, bell pepper, celery, and garlic. Sauté until softened, about 5-7 minutes.

      Add Ingredients: Stir in the diced tomatoes (with their juices), chicken broth, rice, Cajun seasoning, thyme, cayenne pepper, and bay leaves. Add the cooked sausage back into the pot. Mix well.

        Cook the Rice: Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.

          Add Okra: If using, stir in the frozen okra during the last 10 minutes of cooking.

            Season and Serve: Once cooked, season with salt and pepper to taste. Remove the bay leaves before serving. Garnish with fresh parsley and serve with lemon wedges on the side for a squeeze of brightness.
