4 large eggs

1/4 cup milk

Salt and pepper, to taste

1/2 lb breakfast sausage (casings removed if using links)

1 cup shredded cheddar cheese (or your favorite cheese)

4 large flour tortillas (10-inch size works best)

1 tablespoon olive oil or butter

Optional: hot sauce, salsa, or avocado for serving

Instructions
 

Cook the Sausage: In a skillet over medium heat, add the breakfast sausage. Break it apart with a spatula and cook until browned and fully cooked, about 5-7 minutes. Remove from skillet and set aside.

    Whisk the Eggs: In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.

      Scramble the Eggs: In the same skillet used for the sausage, add a tablespoon of olive oil or butter. Lower the heat to medium-low and pour in the egg mixture. Stir gently, cooking until just set but still creamy, about 2-3 minutes. Remove from heat.

        Combine Ingredients: In each tortilla, layer equal portions of the cooked sausage, scrambled eggs, and shredded cheese.

          Roll-Up: Fold in the sides of the tortilla and carefully roll it up from the bottom to the top, securing the filling inside. Repeat with all tortillas.

            Toast the Roll-Ups: Clean the skillet and preheat it over medium heat. Place the roll-ups seam-side down in the skillet. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
