1 pound Italian sausage (mild or spicy, based on preference)

2 tablespoons olive oil

1 large onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

1 can (14.5 ounces) diced tomatoes, drained

Fresh basil, for garnish

Crusty bread or cooked rice, for serving

Instructions
 

Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook until browned and cooked through (about 5-7 minutes). Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the sliced onions and bell peppers. Sauté for about 5-6 minutes until the vegetables begin to soften. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Season the Mix: Stir in the oregano, Italian seasoning, red pepper flakes, salt, and pepper. Combine well, allowing the flavors to meld for 2-3 minutes.

        Combine Sausage and Tomatoes: Return the cooked sausage to the skillet and add the drained diced tomatoes. Stir everything together and cook for another 5 minutes, allowing the mixture to heat through and thicken slightly.

          Garnish and Serve: Remove from heat and garnish with fresh basil. Serve hot with crusty bread or over cooked rice to soak up the delicious juices.
