Sausage and Cheddar Breakfast Bites

1 pound breakfast sausage (bulk or casings removed)

1 cup shredded sharp cheddar cheese

1 cup all-purpose flour

1/2 cup milk

2 large eggs

1/4 cup green onions, finely chopped

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil (for greasing the baking pan)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with olive oil.

    Cook the Sausage: In a skillet over medium heat, crumble the sausage and cook until browned and fully cooked. Drain any excess grease and set aside to cool for a few minutes.

      Mix the Wet Ingredients: In a large mixing bowl, whisk together the eggs and milk until well combined.

        Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, garlic powder, onion powder, salt, and black pepper.

          Add Cheese and Onions: To the egg mixture, add the shredded cheddar cheese and chopped green onions, then mix well.

            Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

              Fold in the Sausage: Gently fold the cooked sausage into the batter until evenly distributed.

                Fill the Muffin Tin: Spoon the mixture into the prepared mini muffin tin, filling each cup about 3/4 full.

                  Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                    Cool and Serve: Remove the bites from the oven and allow them to cool in the muffin tin for 5 minutes. Then transfer to a wire rack to cool slightly before serving. Enjoy warm or at room temperature!
