Sauerkraut Casserole

4 cups sauerkraut, drained and rinsed

1 lb ground pork (or sausage of your choice)

1 large onion, diced

2 cloves garlic, minced

2 cups cooked rice (white or brown)

1 cup shredded cheddar cheese (or your favorite cheese)

1 tsp caraway seeds

1 tsp paprika

1/2 tsp black pepper

Salt to taste

1 can (15 oz) diced tomatoes, undrained

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add olive oil, then sauté the diced onion and minced garlic until the onions are translucent (about 5 minutes). Add the ground pork and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.

      Combine Ingredients: In a large mixing bowl, combine the cooked meat mixture with cooked rice, sauerkraut, diced tomatoes (with juice), caraway seeds, paprika, black pepper, and salt. Mix everything well until evenly combined.

        Assemble the Casserole: Grease a 9x13-inch baking dish (or equivalent) with a little olive oil. Pour half of the sauerkraut mixture into the dish and spread it out evenly. Sprinkle half of the shredded cheddar cheese on top. Layer the remaining sauerkraut mixture over the cheese and top with the remaining shredded cheese.

          Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

            Serve: Once baked, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired, then slice and serve warm!
