4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup canned black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 red bell pepper, diced

1 small red onion, diced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded Monterey Jack cheese (or a blend of cheeses)

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Preheat Oven or Grill: Preheat your oven to 400°F (200°C) or prepare your grill for medium heat.

    Prepare Foil Sheets: Tear off four large pieces of aluminum foil, about 12x18 inches each. Lay them on a flat surface.

      Season Chicken: In a bowl, combine ground cumin, chili powder, garlic powder, salt, pepper, and a drizzle of olive oil. Rub the spice mixture onto the chicken breasts.

        Assemble the Packets: Place one seasoned chicken breast in the center of each foil piece. Top each chicken breast with an equal amount of cherry tomatoes, black beans, corn, diced red bell pepper, and red onion.

          Add Cheese: Sprinkle about 1/4 cup of shredded Monterey Jack cheese on top of the veggies in each packet.

            Fold the Packets: Fold the sides of the foil over the ingredients and roll the top tightly to seal, making sure they are well secured to prevent juice from leaking.

              Cook: Place the foil packets on a baking sheet (if using the oven) or directly on the grill. Cook for 25-30 minutes, or until the chicken is cooked through and juices run clear. (Note: cooking times may vary based on thickness of the chicken.)
