Salmon Skewers with Lime Salsa

For the Salmon Skewers:

1 lb fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Wooden skewers (soaked in water for 30 minutes) or metal skewers

For the Lime Salsa:

1 cup diced tomatoes

½ cup diced red onion

1 fresh jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice and zest of 2 limes

Salt and pepper to taste

Marinate the Salmon:

    In a bowl, combine olive oil, soy sauce, honey, minced garlic, smoked paprika, salt, and pepper. Add the salmon cubes and gently toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

      Prepare the Lime Salsa:

        In a separate bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro. Add the lime juice and zest, then season with salt and pepper to taste. Mix well and set aside to let the flavors meld.

          Assemble the Skewers:

            Preheat a grill or grill pan to medium-high heat. Thread the marinated salmon cubes onto the soaked wooden skewers or metal skewers, leaving a little space between each piece for even cooking.

              Grill the Skewers:

                Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the salmon is opaque and flakes easily with a fork. Be careful not to overcook!

                  Serve:
