Salmon Pasta in Lemon Garlic Cream Sauce

8 oz fettuccine or spaghetti

2 salmon fillets (about 6 oz each)

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

Zest and juice of 1 lemon

1/2 cup grated Parmesan cheese

1 cup baby spinach

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for heat

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set the pasta aside.

    Prepare the Salmon: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper. Add them to the skillet, skin-side down (if the skin is on). Cook for about 4-5 minutes until golden brown. Flip and cook for an additional 3-4 minutes until the salmon is cooked through. Remove from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, lemon juice, and lemon zest. Stir to combine, and let the mixture simmer for 2-3 minutes to thicken slightly.

        Combine Pasta and Sauce: Lower the heat, then add the cooked pasta and reserved pasta water to the skillet. Toss to combine, ensuring the pasta is well-coated in the creamy lemon garlic sauce. Stir in the baby spinach until it wilts down, and then mix in the grated Parmesan cheese until melted.

          Flake the Salmon: While the pasta is on low heat, gently flake the cooked salmon into bite-sized pieces and add it back to the skillet. Toss everything together carefully so that the salmon stays in larger chunks while mixing well with the pasta.
