Roasted Tomato & Basil Soup – So Cozy!

2 lbs ripe Roma tomatoes, halved

1 large onion, diced

6 cloves garlic, peeled and whole

3 tablespoons olive oil

Salt, to taste

Freshly ground black pepper, to taste

1 teaspoon sugar (optional, to balance acidity)

4 cups vegetable broth (or chicken broth for non-vegetarians)

1 cup fresh basil leaves, packed

1 tablespoon balsamic vinegar

½ cup heavy cream (optional, for creaminess)

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes: On a large baking sheet, arrange the halved Roma tomatoes, diced onion, and whole garlic cloves. Drizzle with olive oil, and sprinkle with salt, pepper, and sugar (if using). Toss everything together until well-coated.

      Roast the Vegetables: Roast in the preheated oven for 30-35 minutes, or until the tomatoes are caramelized and the onions are tender and slightly browned.

        Blend the Base: Once roasted, transfer the tomato mixture to a large pot. Add the vegetable or chicken broth. Simmer over medium heat for about 10 minutes.

          Add Fresh Basil: Stir in the fresh basil leaves and balsamic vinegar. Remove from heat and let cool slightly.

            Blend to Perfection: Using an immersion blender, blend the soup until smooth. Alternatively, transfer the mixture to a blender in batches, being careful with the hot liquid.

              Optional Creaminess: For a creamier soup, stir in heavy cream after blending and heat over low heat until warmed through. Adjust seasoning with salt and pepper to taste.

                Serve & Garnish: Ladle the soup into bowls and garnish with additional fresh basil leaves. Serve warm with crusty bread or grilled cheese on the side for an extra cozy experience!
