2 slices of rustic sourdough bread

2 tablespoons unsalted butter, softened

1/4 cup roasted red peppers (jarred or homemade), chopped

1/3 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)

1 clove garlic, minced

Salt and black pepper to taste

Prep the Ingredients: If using jarred roasted red peppers, drain and chop them into small pieces. In a small bowl, combine feta cheese, mozzarella cheese, chopped basil, minced garlic, and a pinch of salt and pepper. Mix until well combined.

    Assemble the Sandwich: Spread a thin layer of softened butter on one side of each slice of sourdough bread. On the unbuttered side of one slice, layer the cheese mixture evenly, followed by the chopped roasted red peppers. Top with the second slice of bread, buttered side facing up.

      Grill the Sandwich: Preheat a non-stick skillet or griddle over medium heat. Carefully place the sandwich in the skillet. Grill for about 4-5 minutes, or until the bottom is golden brown and crispy.
