Roasted Red Pepper & Feta Dip – So Creamy!

Ingredients
  

2 large red bell peppers

4 oz feta cheese, crumbled

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Pita chips or vegetable sticks (for serving)

Instructions
 

Roast the Peppers:

    - Preheat your oven to 425°F (220°C).

      - Place the whole red bell peppers on a baking sheet and roast in the oven for about 25-30 minutes or until the skins are charred and blistered. Turn the peppers occasionally for even roasting.

        - Once done, remove the peppers from the oven, place them in a bowl, and cover with plastic wrap to steam for 10 minutes. This will make peeling easier.

          Peel and Prepare:

            - After steaming, peel off the charred skins, remove the stems and seeds. Chop the roasted peppers into smaller pieces.

              Blend the Ingredients:

                - In a food processor, combine the chopped roasted red peppers, feta cheese, cream cheese, Greek yogurt, olive oil, minced garlic, lemon juice, smoked paprika, cayenne pepper, salt, and black pepper.

                  - Blend until smooth and creamy. Taste and adjust seasoning if needed.

                    Chill the Dip:

                      - Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

                        Serve:

                          - Before serving, give the dip a good stir. Garnish with freshly chopped parsley. Serve it with pita chips or vegetable sticks for dipping.
