2 large red bell peppers

1 cup crumbled feta cheese

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust for heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and drizzle with olive oil. Roast them in the oven for about 20-25 minutes, turning occasionally, until the skins are charred and blistered.

    Steam and Peel: Once roasted, remove the peppers from the oven and immediately place them in a bowl. Cover with plastic wrap or a clean kitchen towel and let them steam for about 10 minutes. This will help loosen the skins for easy peeling. After steaming, peel off the charred skin, remove the seeds, and chop the peppers roughly.

      Blend the Dip: In a food processor, combine the roasted red peppers, crumbled feta cheese, cream cheese, minced garlic, lemon juice, oregano, and red pepper flakes. Blend until smooth and creamy. If the mixture is too thick, you can add a teaspoon of water or olive oil to reach your desired consistency.

        Season: Taste the dip and add salt and pepper as needed. Blend again to mix in the seasonings.

          Serve: Transfer the dip to a serving bowl and garnish with chopped fresh parsley. You can drizzle a bit of olive oil on top for added flavor and presentation.
