Roasted Garlic & Parmesan Gnocchi – A Comfort Food Win!

1 pound (450g) gnocchi (store-bought or homemade)

1 bulb of garlic

3 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)

1 cup freshly grated Parmesan cheese

2 tablespoons butter

2 cups baby spinach (optional)

Fresh parsley, chopped (for garnish)

Additional grated Parmesan for serving

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the bulb of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast for 30-35 minutes, or until the cloves are soft and caramelized. Allow to cool slightly before squeezing the roasted garlic out of the skin.

    Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the top (typically about 2–3 minutes). Drain and set aside.

      Sauté the Gnocchi: In a large skillet over medium heat, heat 2 tablespoons of olive oil with the butter. Add the cooked gnocchi to the pan and sauté until they are golden and slightly crispy, about 5-7 minutes.

        Add Roasted Garlic: Once the gnocchi are crisp, squeeze the roasted garlic into the skillet. Using a spatula, gently mix it into the gnocchi, breaking it up as needed.

          Season and Incorporate Spinach: Add the salt, black pepper, Italian seasoning, and baby spinach (if using). Stir until the spinach wilts down and everything is well coated.

            Finish with Cheese: Sprinkle the grated Parmesan over the gnocchi, tossing to combine until the cheese is melted and coats the gnocchi beautifully.

              Serve: Transfer the gnocchi to serving plates, garnish with chopped parsley, and add more grated Parmesan on top as desired. Serve warm and enjoy your comforting dish!
