4 bone-in, skin-on chicken thighs

1 head of garlic

3 tablespoons olive oil

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon fresh parsley, chopped

Salt and pepper to taste

1 lemon (zested and juiced)

1 teaspoon paprika (optional, for color)

½ cup chicken broth or white wine (optional, for moisture)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Garlic: Take the head of garlic and slice off the top to expose the cloves. Drizzle with a bit of olive oil, wrap it in aluminum foil, and set it aside.

      Season the Chicken: In a small bowl, whisk together the olive oil, chopped rosemary, thyme, parsley, lemon zest, lemon juice, salt, pepper, and paprika (if using).

        Coat the Chicken: Pat the chicken thighs dry with paper towels. Rub the herb mixture all over the chicken, making sure to get under the skin for maximum flavor.

          Place Chicken in Baking Dish: Arrange the chicken thighs skin-side up in a large baking dish or oven-safe skillet.

            Add Garlic: Place the wrapped garlic in the baking dish alongside the chicken. If desired, pour the chicken broth or white wine into the bottom of the dish for added moisture.
