Ingredients

2 cups raw almonds

1 cup granulated sugar

2 tablespoons ground cinnamon

1/2 teaspoon salt

1 egg white

1 teaspoon vanilla extract

1 tablespoon water

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent the almonds from sticking.

Prepare the Almonds: In a mixing bowl, add the raw almonds. In a separate smaller bowl, combine the granulated sugar, ground cinnamon, and salt.

Make the Egg White Mixture: In another bowl, whip the egg white until slightly frothy. Add the vanilla extract and water, mixing until combined. This mixture will help the sugar adhere to the almonds.

Combine Ingredients: Pour the egg white mixture over the almonds, stirring gently to coat the almonds evenly.

Add the Cinnamon Sugar: Gradually sprinkle the cinnamon-sugar mixture over the coated almonds, stirring continuously until all the almonds are well covered.

Spread on Baking Sheet: Transfer the coated almonds onto the prepared baking sheet in a single layer, ensuring they are evenly spaced to avoid clumping.

Roast the Almonds: Bake in the preheated oven for 20-25 minutes, stirring every 10 minutes to ensure even roasting. You’ll know they’re ready when they turn a lovely golden brown and are aromatic.

Cool and Enjoy: Once roasted, take the almonds out of the oven and let them cool completely on the baking sheet. They will harden as they cool. Once cooled, transfer them to an airtight container for storage or enjoy them immediately!
