Roast Leg of Lamb with Mint Sauce

1 leg of lamb (about 4-5 lbs)

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 tablespoon salt

1 teaspoon black pepper

Juice of 1 lemon

For the Mint Sauce:

1 cup fresh mint leaves, finely chopped

2 tablespoons sugar

1/2 cup apple cider vinegar

1/4 cup boiling water

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a small bowl, combine the minced garlic, chopped rosemary, thyme, Dijon mustard, olive oil, salt, black pepper, and lemon juice. Mix well until it forms a paste.

      Prepare the Lamb: Pat the leg of lamb dry with paper towels. Using a sharp knife, make shallow incisions (about ½ inch deep) all over the surface. This allows the marinade to penetrate deep into the meat.

        Apply the Marinade: Rub the herb paste evenly over the entire surface of the lamb, ensuring it gets into the incisions. Let the lamb marinate for at least 30 minutes at room temperature or refrigerate it for up to 24 hours for more flavor.

          Roast the Lamb: Place the marinated leg of lamb on a roasting rack in a roasting pan. Roast in the preheated oven for 15 minutes to create a nice crust. Then, reduce the oven heat to 350°F (175°C) and continue roasting for about 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part reads 135°F (57°C) for medium-rare. Adjust time based on desired doneness.

            Rest the Lamb: Once cooked to your preference, remove the lamb from the oven and cover it loosely with aluminum foil. Let it rest for 15-20 minutes. This allows the juices to redistribute.
