Ritz Chicken Casserole

Ingredients
  

4 boneless, skinless chicken breasts

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 tsp onion powder

1 tsp garlic powder

Salt and pepper to taste

1 sleeve Ritz crackers (crushed)

1/2 cup butter (melted)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet over medium heat, cook the chicken breasts for about 5-7 minutes on each side until golden brown and cooked through. Remove from heat and let them cool before cutting them into bite-sized pieces.

      Prepare the Mixture: In a large mixing bowl, combine the cream of chicken soup, sour cream, shredded cheddar cheese, mixed vegetables, onion powder, garlic powder, salt, and pepper. Stir well to combine.

        Add Chicken: Fold in the cooked chicken pieces into the mixture until evenly coated.

          Assemble the Casserole: Pour the chicken mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Prepare the Topping: In a separate bowl, combine the crushed Ritz crackers with melted butter. Mix until the crackers are well-coated with butter.

              Top the Casserole: Evenly sprinkle the Ritz cracker mixture over the top of the casserole.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes until bubbly and the cracker topping is golden brown.

                  Garnish and Serve: Once done, remove from the oven and let it sit for a few minutes. Optionally, sprinkle with fresh parsley before serving for a pop of color.
