1 pre-made pie crust (store-bought or homemade)

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

3 large eggs

1/2 cup milk (or cream for extra richness)

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1/4 teaspoon nutmeg

Salt and pepper to taste

1 tablespoon olive oil

Fresh herbs (like parsley or dill) for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Spinach: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

      Prepare the Filling: In a large mixing bowl, whisk together the eggs, ricotta cheese, milk, nutmeg, salt, and pepper until well combined. Fold in the sautéed spinach and half of the shredded mozzarella cheese.

        Assemble the Quiche: Place the pie crust in a 9-inch pie dish. Pour the ricotta-spinach filling into the prepared crust. Sprinkle the remaining mozzarella cheese and Parmesan cheese evenly on top.

          Bake: Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and lightly golden on top. You can check for doneness by inserting a knife into the center; it should come out clean.

            Cool and Serve: Let the quiche cool for 10-15 minutes before slicing. Garnish with fresh herbs before serving.
