12 oz fettuccine pasta

1 cup heavy cream

1/2 cup unsalted butter (1 stick)

1 cup freshly grated Parmesan cheese

1 cup freshly grated mozzarella cheese

4 cloves garlic, minced

1/4 teaspoon nutmeg (freshly grated, if possible)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Pinch of red pepper flakes for a bit of heat

Cook the Fettuccine: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet over medium-low heat, melt the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes, until fragrant (be careful not to burn the garlic).

      Add the Cream: Pour in the heavy cream and bring the mixture to a gentle simmer, stirring occasionally. Allow it to simmer for about 5 minutes for the flavors to meld and to slightly thicken.

        Incorporate the Cheese: Gradually add the grated Parmesan and mozzarella cheeses to the cream mixture, stirring continuously until the cheeses are completely melted and the sauce is smooth and creamy.

          Season the Sauce: Stir in the grated nutmeg, and season with salt and black pepper to taste. If you prefer a hint of heat, add a pinch of red pepper flakes.

            Combine Pasta and Sauce: Add the cooked fettuccine directly into the sauce. Toss well to ensure the pasta is evenly coated. If the sauce is too thick, gradually add a little reserved pasta water until desired consistency is reached.
