2 cups fresh rhubarb, chopped

1 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 large egg

1/2 teaspoon ground cinnamon

1/4 cup powdered sugar, for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.

    In a medium bowl, combine the chopped rhubarb, granulated sugar, vanilla extract, and lemon juice. Let this mixture sit for about 10 minutes to allow the rhubarb to soften.

      In another bowl, mix together the flour, baking powder, salt, and ground cinnamon.

        In a separate large bowl, whisk the melted butter and egg together until well combined.

          Gradually add the dry ingredients into the wet mixture, stirring until just combined.

            Gently fold in the rhubarb mixture until evenly incorporated.

              Pour the batter into the prepared baking pan, spreading it evenly.

                Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

                  Once done, remove from the oven and allow to cool completely in the pan on a wire rack.

                    Once cool, dust with powdered sugar and cut into squares before serving.
