½ cup unsalted butter, softened

4 cups powdered sugar

2 tbsp fresh lemon juice

Zest of 1 lemon

½ tsp vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    Dry Ingredients: In a bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until evenly mixed.

      Cream the Butter and Sugar: In a separate large bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy (about 3-5 minutes).
