Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup cold sparkling water (or regular water)

1 cup panko breadcrumbs

Vegetable oil for frying

For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon lime juice

1 teaspoon honey (optional, for sweetness)

Chopped cilantro or green onions for garnish

Instructions

Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Pat dry to remove excess moisture.

Make the Batter: In a mixing bowl, whisk together the flour, garlic powder, paprika, salt, and black pepper. Gradually add the cold sparkling water until the mixture is smooth and has a pancake batter-like consistency.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it is fully coated. Allow excess batter to drip off.

Breadcrumb Coating: Roll the battered cauliflower in panko breadcrumbs to coat each piece evenly, pressing gently to ensure they stick.

Heat the Oil: In a deep pan or skillet, heat about 1-2 inches of vegetable oil over medium heat. To check if the oil is ready, drop a small bit of batter into it—if it sizzles and bubbles, it’s ready for frying.

Fry the Cauliflower: Carefully add the cauliflower florets in batches to the hot oil, avoiding overcrowding the pan. Fry for about 3-4 minutes or until they turn golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Prepare the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth. Adjust seasoning to taste.

Serve: Arrange the crispy Bang Bang cauliflower bites on a platter, drizzle with the Bang Bang sauce, and garnish with chopped cilantro or green onions. Serve immediately while hot, with extra sauce on the side for dipping.
