Ingredients

1 cup canned pumpkin puree

1 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin spice (blend of cinnamon, nutmeg, ginger, and cloves)

1 cup strong brewed coffee, cooled

2 tablespoons coffee liqueur (optional)

1 package ladyfinger cookies (about 24)

Cocoa powder, for dusting

Whipped cream, for garnish (optional)

Cinnamon stick, for garnish (optional)

Instructions

Prepare the Pumpkin Mixture: In a large bowl, combine the canned pumpkin puree, mascarpone cheese, granulated sugar, vanilla extract, and pumpkin spice. Mix until smooth and creamy.

Whip the Cream: In a separate bowl, using an electric mixer, whip the heavy cream until soft peaks form. Carefully fold the whipped cream into the pumpkin mixture until well combined. This creates a light and airy filling.

Prepare Coffee Mixture: In a shallow dish, mix the cooled coffee with the coffee liqueur (if using). This will be used to soak the ladyfingers.

Layer the Tiramisu: Quickly dip each ladyfinger into the coffee mixture, ensuring they soak but do not become too soggy. Arrange a layer of soaked ladyfingers at the bottom of a rectangular or square dish.

Add the Pumpkin Filling: Spread half of the pumpkin mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.

Repeat Layers: Add another layer of soaked ladyfingers on top of the pumpkin filling and top with the remaining pumpkin mixture, smoothing it out again.

Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight for best results) to allow the flavors to meld and the tiramisu to set.

Serve: Before serving, dust the top with cocoa powder. Optionally, garnish with a dollop of whipped cream and a cinnamon stick for an extra touch.
