Pumpkin Spice Latte Muffins

Ingredients
  

1 cup all-purpose flour

1 cup whole wheat flour

1 tablespoon pumpkin pie spice

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup (1 stick) unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 cup canned pumpkin puree

½ cup brewed coffee, cooled

1 teaspoon vanilla extract

½ cup milk (or a dairy-free alternative)

Optional: ½ cup chocolate chips or chopped nuts for added texture

Instructions
 

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with non-stick spray.

    In a large bowl, whisk together the all-purpose flour, whole wheat flour, pumpkin pie spice, baking powder, baking soda, and salt until well combined.

      In another bowl, cream the softened butter and brown sugar together using an electric mixer until light and fluffy, about 3 minutes.

        Add the eggs, one at a time, mixing well after each addition. Then, beat in the pumpkin puree, cooled brewed coffee, and vanilla extract until the mixture is smooth.

          Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix. If desired, fold in chocolate chips or nuts at this stage.

            Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

              Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Remove from the oven and allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
