Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1 cup pumpkin puree (not pumpkin pie filling)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1/2 cup brewed espresso, cooled (or strong coffee)

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

Whipped cream and additional pumpkin spice for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined.

Combine Wet Ingredients: In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, eggs, brewed espresso, vegetable oil, and vanilla extract until smooth.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently with a spatula until just combined. Be careful not to overmix; a few lumps are ok. If desired, fold in the chocolate chips for some added sweetness.

Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Serve: If you like, top each muffin with a swirl of whipped cream and a sprinkle of pumpkin spice for that extra latte touch!
