1 cup rolled oats

1/2 cup canned pumpkin puree

1/4 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chopped walnuts or pecans (optional)

1/4 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the canned pumpkin, almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well incorporated.

      Combine Dry Ingredients: In a separate bowl, mix the rolled oats, pumpkin pie spice, cinnamon, and salt. If you’re adding nuts or chocolate chips, fold them in at this stage.

        Combine Both Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until you have a sticky dough that holds together. If the mixture is too dry, add a splash of almond milk or water.

          Form Bites: Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Place each ball onto the prepared baking sheet, ensuring they’re spaced about an inch apart. Gently flatten each ball slightly.

            Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the bites start to turn golden brown.
