Ingredients

4 boneless, skinless chicken breasts

1 cup pomegranate juice (100% juice, no added sugar)

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup pomegranate seeds (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken:

    - In a large bowl, whisk together pomegranate juice, balsamic vinegar, honey, olive oil, minced garlic, rosemary, salt, and black pepper.

      - Add the chicken breasts to the marinade, ensuring they’re well coated. Cover and let them marinate in the refrigerator for at least 1 hour, or overnight for the best flavor.

        Preheat the Grill/Pan:

          - If using a grill, preheat it to medium-high heat. If you prefer to pan-sear, heat a large skillet over medium heat with a drizzle of olive oil.

            Cook the Chicken:

              - Remove the chicken from the marinade, letting the excess drip off. Reserve the marinade for later use.

                - Grill or pan-sear the chicken for about 6-7 minutes on each side, until golden brown and the internal temperature reaches 165°F (75°C).

                  Make the Glaze:

                    - In a small saucepan, bring the reserved marinade to a boil over medium-high heat. Reduce heat to a simmer and let it cook for about 10 minutes until thickened and syrupy.

                      Glaze the Chicken:

                        - Brush the thickened glaze over the chicken during the last few minutes of cooking, allowing it to caramelize slightly.

                          Serve:

                            - Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Slice the chicken and drizzle with any leftover glaze. Top with pomegranate seeds and chopped parsley for an extra burst of flavor.

                              Enjoy:

                                - Serve with your choice of sides, such as roasted vegetables, wild rice, or a fresh salad, for a complete meal!
