2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup fresh pineapple juice

4 large eggs

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp vanilla extract

1 cup crushed pineapple, drained

½ cup shredded coconut (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.

      Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

        In another bowl, whisk together flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients into the wet mixture, alternating with the fresh pineapple juice. Mix until just combined.

            Gently fold in the crushed pineapple and shredded coconut (if using) into the batter.

              Pour the batter into the prepared baking pan, smoothing the top with a spatula.

                Bake in preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                  Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

                    Once cooled, dust the cake with powdered sugar, if desired, for an extra touch of sweetness.
