1 can (20 oz) crushed pineapple, drained

1 cup whipped cream (store-bought or homemade)

1 cup cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 cup mini marshmallows

1/2 cup shredded coconut (sweetened or unsweetened, based on preference)

1/2 cup chopped pecans or walnuts (optional)

1/2 cup graham cracker crumbs

Fresh pineapple slices and mint leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese and granulated sugar. Beat until smooth and creamy.

    Add the vanilla extract and mix well. Gradually fold in the whipped cream until fully incorporated.

      Stir in the drained crushed pineapple, mini marshmallows, shredded coconut, and chopped nuts, if using. Mix gently until everything is combined.

        In a separate bowl, prepare a layer of graham cracker crumbs for the bottom of your serving dish. Spread half of the cream cheese and pineapple mixture over the crumbs.

          Add another layer of graham cracker crumbs, followed by the remaining cream cheese mixture. Top with any remaining graham cracker crumbs if you have them.

            Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results. This allows the flavors to meld beautifully.

              Prior to serving, garnish with fresh pineapple slices and mint leaves for an extra touch of freshness and color.
