For the cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 can (20 oz) crushed pineapple, drained and juice reserved

1 cup buttermilk

3 large eggs

1 tsp vanilla extract

2 tsp baking powder

1 tsp baking soda

½ tsp salt

For the frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

2 tbsp reserved pineapple juice

½ cup toasted coconut flakes (optional for garnish)

For garnish:

Fresh pineapple slices

Additional toasted coconut flakes

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      Mix Dry Ingredients:

        In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

          Cream Butter and Sugar:

            In another large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.

              Add Eggs and Vanilla:

                Beat in the eggs one at a time, ensuring each is fully incorporated. Mix in the vanilla extract.

                  Combine with Wet Ingredients:

                    Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk and crushed pineapple. Start and end with the dry ingredients, mixing until just combined. Do not overmix.

                      Bake the Cake:

                        Pour the cake batter evenly into the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                          Cool the Cakes:

                            Once baked, remove from the oven and let the cakes cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.

                              Prepare the Frosting:

                                In a mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar, mixing until combined. Add the vanilla extract and reserved pineapple juice, mixing until smooth and creamy.

                                  Assemble the Cake:

                                    Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting over the top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.

                                      Garnish:

                                        Decorate the top of the cake with fresh pineapple slices and sprinkle with toasted coconut flakes if desired.
