Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsweetened shredded coconut

¾ cup unsalted butter, melted

¼ cup brown sugar

1 teaspoon vanilla extract

For the Creamy Filling:

1 cup cream cheese, softened

1 cup powdered sugar

½ cup canned crushed pineapple, drained

1 teaspoon vanilla extract

½ cup whipped cream (or cool whip)

For the Topping:

½ cup toasted coconut flakes

Fresh pineapple chunks for garnish (optional)

Instructions

Prepare the Crust:

    - Preheat the oven to 350°F (175°C).

      - In a medium bowl, combine the graham cracker crumbs, shredded coconut, melted butter, brown sugar, and vanilla extract. Mix until everything is well combined.

        - Press the mixture firmly into the bottom of a greased 9x9-inch baking pan to form an even layer. Bake for 10 minutes or until slightly golden. Remove from the oven and let it cool.

          Make the Creamy Filling:

            - In a large bowl, beat the softened cream cheese until smooth and creamy.

              - Gradually add the powdered sugar and mix until well combined.

                - Fold in the crushed pineapple and vanilla extract until everything is well incorporated.

                  - Gently fold in the whipped cream to add lightness to the filling.

                    Assemble the Bars:

                      - Pour the creamy filling over the cooled crust and spread it evenly with a spatula.

                        - Sprinkle the toasted coconut flakes over the top of the filling, pressing them down slightly to ensure they stick.

                          Chill and Serve:

                            - Refrigerate the bars for at least 4 hours or until the filling is set.

                              - Once chilled, cut into squares or bars and garnish with fresh pineapple chunks if desired.

                                Enjoy Your Pineapple Bliss Bars!

                                  - Serve chilled as a refreshing dessert perfect for any occasion, and bask in the tropical flavors!
