Perfectly Moist Carrot Cake

2 cups all-purpose flour

2 cups granulated sugar

1 cup vegetable oil

4 large eggs

2 cups finely grated carrots (about 4 medium-sized)

1 cup crushed pineapple, drained

1/2 cup unsalted walnuts or pecans, chopped (optional)

1/2 cup raisins (optional)

2 teaspoons baking soda

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (optional for consistency)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

      Mix Wet Ingredients: In another bowl, beat the sugar and vegetable oil together until well combined. Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.

        Add Carrots and Pineapple: Fold in the grated carrots and crushed pineapple until evenly distributed. If using, add the optional nuts and raisins at this stage as well.

          Incorporate Dry Ingredients: Gradually add the dry ingredient mixture into the wet mixture, gently folding with a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine.

            Bake: Divide the batter equally between the prepared cake pans. Bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

              Prepare Cream Cheese Frosting: In a mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar, mixing on low speed until fully combined. Finally, stir in the vanilla extract. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is achieved.

                Frost the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the entire cake.
