4 slices of sourdough bread

2 tablespoons unsalted butter, softened

4 ounces sharp cheddar cheese, grated

4 ounces fresh mozzarella cheese, sliced

4 slices of ripe tomato

1 avocado, sliced

Fresh basil leaves (about 6-8)

Salt and pepper to taste

Balsamic glaze for drizzling (optional)

Prep the Bread: Start by spreading a thin layer of softened butter on one side of each slice of sourdough bread.

    Assemble the Sandwich: On the unbuttered side of two slices, layer the grated cheddar cheese evenly. Follow with the sliced mozzarella cheese, fresh tomato slices, avocado slices, and basil leaves. Season with a pinch of salt and pepper.

      Top It Off: Place the other two slices of bread on top, buttered side facing out, to create two sandwiches.

        Preheat the Grill: Heat a skillet or griddle over medium heat. If you have a grill pan, that works wonderfully too.

          Grill the Sandwiches: Once the skillet is hot, carefully place the sandwiches in the pan. Grill for about 3-4 minutes until the bottom is golden brown and the cheeses have started to melt.

            Flip and Finish: Use a spatula to flip the sandwiches carefully. Grill the other side for another 3-4 minutes, applying gentle pressure with the spatula to help crisp the crust and melt the cheese thoroughly.

              Serve: Once both sides are perfectly golden brown and the cheese is gooey, remove the sandwiches from the heat. Allow to cool for a minute, then cut them in half diagonally. Drizzle with balsamic glaze if using, and serve warm.
