1 whole chicken (4-5 lbs)

2 tablespoons olive oil

1 tablespoon kosher salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 lemon, halved

4 cloves garlic, crushed

Fresh herbs (such as rosemary and thyme, for stuffing)

4 carrots, cut into large pieces

2 onions, quartered

1 cup chicken broth

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: Pat the chicken dry with paper towels. This step is crucial for achieving that golden skin!

      Season the Chicken: In a small bowl, mix the olive oil, kosher salt, black pepper, smoked paprika, garlic powder, and onion powder until combined. Rub this mixture all over the chicken, including under the skin and inside the cavity.

          Prepare the Veggies: In a roasting pan, spread out the carrots and onions. Place the chicken on top of the vegetables, breast side up. Pour the chicken broth into the bottom of the pan.

            Roast the Chicken: Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is perfectly golden and crispy. Baste the chicken with pan juices halfway through for extra flavor and moisture.
