Perfect Peach Dumplings

4 ripe peaches, peeled and halved

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup granulated sugar

1/2 teaspoon cinnamon

1/4 cup unsalted butter, softened

1/4 cup milk

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/2 cup brown sugar

1 cup water

1 tablespoon cornstarch (optional, for thickening)

Ice cream (for serving, optional)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a baking dish with butter or non-stick spray.

    In a mixing bowl, combine the all-purpose flour, baking powder, salt, granulated sugar, and cinnamon.

      In another bowl, cream together the softened butter, milk, and vanilla extract until smooth.

        Gradually mix the dry ingredients into the wet mixture until just combined to form a soft dough. Do not overmix.

          On a lightly floured surface, roll out the dough to about 1/4 inch thick. Cut out circles large enough to wrap around each peach half.

            Wrap each peach half in a circle of dough completely, ensuring the peach is fully enclosed. Pinch the edges to seal.

              Place the wrapped dumplings in the prepared baking dish. In a separate bowl, mix water, brown sugar, and lemon juice to make a syrup. Pour the syrup over the dumplings.

                For a thicker syrup, dissolve cornstarch in a little water, then add to the syrup mixture before pouring it over the dumplings.

                  Bake in the preheated oven for 25-30 minutes or until the dumplings are golden brown and cooked through.

                    Once done, let the dumplings cool slightly before serving. Optional: serve warm with a scoop of ice cream on top for an extra indulgent treat.
