1 lb (450g) flank steak, thinly sliced against the grain

3 tablespoons soy sauce

2 tablespoons oyster sauce

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium onion, sliced

2 cloves garlic, minced

1 inch ginger, grated

1 teaspoon black pepper

1 teaspoon sugar

½ teaspoon sesame oil (optional)

Cooked rice or noodles, for serving

Green onions, chopped (for garnish)

Marinate the Steak: In a bowl, combine the sliced flank steak with soy sauce, oyster sauce, and black pepper. Let it marinate for at least 15-20 minutes to infuse the flavors.

    Prepare the Cornstarch Mixture: After marinating, sprinkle the cornstarch over the meat and mix well until the steak is coated evenly. This will help create a nice sear when cooking.

      Sauté the Vegetables: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium high heat. Add the sliced onion and bell peppers. Stir-fry for about 3-4 minutes until they are slightly tender but still crisp. Remove the vegetables from the skillet and set them aside.

        Cook the Steak: In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, add the marinated steak in a single layer. Allow it to sear for about 2-3 minutes without stirring, then toss to stir-fry for another 2-3 minutes until the steak is browned and cooked through.

          Combine Everything: Add the minced garlic and grated ginger to the skillet with the steak, stirring for the last minute until fragrant. Then, return the cooked bell peppers and onions to the pan. Add the sugar and sesame oil (if using), tossing everything together to combine. Stir-fry for an additional 1-2 minutes to heat everything through.

            Serve: Remove from heat and garnish with chopped green onions. Serve hot over cooked rice or noodles for a complete meal.
