Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

1 teaspoon pure vanilla extract

1/4 teaspoon salt

2 cups all-purpose flour

1 cup finely chopped pecans

1/2 teaspoon almond extract (optional)

1/4 cup powdered sugar (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Make the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy (about 2-3 minutes). Add in the vanilla extract and almond extract (if using) and mix until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry mixture to the butter mixture and mix until just combined.

Add Pecans: Gently fold in the chopped pecans until evenly distributed throughout the dough.

Press the Dough: Transfer the dough into the prepared baking pan. Using your hands or a spatula, press the dough evenly into the bottom of the pan.

Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden brown. The center might look slightly underbaked, but it will firm up as it cools.

Cool and Cut: Allow the shortbread to cool in the pan for about 10 minutes. Then, carefully lift it out using the parchment paper (if using) and place it on a wire rack to cool completely before cutting into squares or bars.

Dust with Sugar: Once cooled, dust with powdered sugar before serving for an elegant touch.

Store: Store leftover bars in an airtight container for up to a week.
