Ingredients

1 cup pecans, finely chopped

1 cup Medjool dates, pitted and chopped

1/2 cup almond flour

1/4 cup maple syrup

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of salt

1/4 cup dark chocolate chips (optional, for drizzling)

Extra chopped pecans for coating

Instructions

Prepare the Base: In a food processor, combine the finely chopped pecans, Medjool dates, almond flour, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Pulse until the mixture is well-combined and sticky.

Form the Balls: With clean hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place formed balls on a parchment-lined baking sheet.

Chill: Once all mixture is rolled into balls, place the baking sheet in the refrigerator and let them chill for at least 30 minutes to firm up.

Coat the Balls: After chilling, you can roll the balls in additional chopped pecans for extra flavor and crunch.

Optional Chocolate Drizzle: If desired, melt the dark chocolate chips in a microwave-safe bowl in 30-second increments, stirring until smooth. Drizzle over the pecan balls for an extra touch.

Serve & Enjoy: Once done, you can serve the pecan pie balls immediately or store them in an airtight container in the refrigerator for up to a week.
