2 ripe pears (Bartlett or Anjou work beautifully)

1 cup ricotta cheese

2 tablespoons honey (plus extra for drizzling)

1 teaspoon vanilla extract

1 tablespoon lemon juice

4 slices of crusty whole grain or sourdough bread

1 tablespoon olive oil

Fresh mint leaves (for garnish)

Pinch of sea salt

Optional: chopped nuts (walnuts or almonds) for added crunch

Prepare the Pears: Wash and slice the pears into thin wedges, removing the core. In a small bowl, combine the pear slices with lemon juice to prevent browning and to enhance flavor. Set aside.
