Ingredients

8 oz (225g) cream cheese, softened

1 cup (250g) creamy peanut butter

1/2 cup (60g) powdered sugar

1 teaspoon vanilla extract

1/4 cup (25g) graham cracker crumbs

1 cup (175g) semi-sweet chocolate chips

1 tablespoon coconut oil (or vegetable oil) for melting chocolate

Sea salt for garnish (optional)

Chopped peanuts for garnish (optional)

Instructions

Prepare the Cheesecake Mixture:

In a large mixing bowl, combine the softened cream cheese and peanut butter. Using an electric mixer, beat until the mixture is smooth and well combined.

      Sweeten and Flavor:

Add the powdered sugar and vanilla extract to the cream cheese mixture. Continue to mix until fully incorporated and creamy. You may need to scrape down the sides of the bowl to ensure everything is mixed well.

          Graham Cracker Crunch:

Gently fold in the graham cracker crumbs until evenly distributed throughout the peanut butter cheesecake mixture. You want a nice texture without over-mixing.

              Shape the Balls:

Using a tablespoon or a small cookie scoop, portion out the mixture and roll it into small balls, about 1 inch in diameter. Place the rolled balls onto a parchment-lined baking sheet. Continue until all the mixture is used.

                  Chill:

Place the baking sheet with the balls in the freezer for about 30 minutes to firm up. This step is crucial for easy handling when coating in chocolate.

                      Prepare the Chocolate Coating:

In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

                          Dip the Cheesecake Balls:

Once the cheesecake balls are firm, remove them from the freezer. Using a fork or toothpick, dip each ball into the melted chocolate, ensuring it's fully coated. Allow the excess chocolate to drip off.

                              Set:

Place the chocolate-covered balls back onto the parchment-lined baking sheet. Before the chocolate sets, sprinkle a tiny pinch of sea salt or chopped peanuts on top for added flavor and crunch.

                                  Chill Again:

Return the dipped cheesecake balls to the refrigerator for at least 15 minutes, or until the chocolate coating is completely set.

                                      Serve and Enjoy:

Once set, your Peanut Butter Cheesecake Balls are ready to rock! Serve chilled for a deliciously sweet treat.
