Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup creamy peanut butter

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 tsp vanilla extract

½ cup buttermilk

½ cup chocolate chips (optional)

½ cup chopped peanuts (for topping)

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

Add the eggs one at a time to the peanut butter mixture, mixing well after each addition. Stir in the vanilla extract.

Gradually mix in the dry ingredients alternately with buttermilk, starting and ending with the flour mixture. Mix just until combined; do not overmix.

If using, gently fold in the chocolate chips for a surprise treat in every slice.

Pour the batter into the prepared cake pan, smoothing the top with a spatula. Sprinkle chopped peanuts over the top for added crunch.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

For an extra touch, you can frost the cooled cake with your favorite chocolate frosting or a simple peanut butter frosting.
