Ingredients

2 cups fresh watermelon, cubed

2 ripe peaches, sliced

1 cup cucumber, diced

1/2 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup red onion, thinly sliced

2 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper to taste

Instructions

Prepare the Ingredients: Begin by washing the watermelon and peaches thoroughly. Cut the watermelon into bite-sized cubes and slice the peaches into thin wedges. Dice the cucumber and chop the fresh mint leaves. Thinly slice the red onion and set aside.

Combine Fruits and Vegetables: In a large mixing bowl, gently toss together the cubed watermelon, peach slices, diced cucumber, and sliced red onion until evenly mixed.

Add Feta and Mint: Sprinkle the crumbled feta cheese and chopped mint leaves over the salad mixture. Be careful not to break apart the feta too much, as you want nice chunks throughout the salad.

Make the Dressing: In a small bowl or jar, whisk together the olive oil and balsamic vinegar. Season with a pinch of salt and pepper to taste. Adjust as necessary for your preferred flavor.

Dress the Salad: Drizzle the dressing over the fruit and vegetable mixture. Toss gently to coat all the ingredients evenly without squashing the fruit.

Serve and Enjoy: Transfer the salad to a serving dish, garnish with additional mint leaves if desired, and serve immediately. This salad is best enjoyed fresh but can be refrigerated for up to 30 minutes before serving.
