1 cup fresh peaches, diced

1/2 cup red onion, finely chopped

1 jalapeño, minced (seeds removed for less heat)

Juice of 2 limes

1 tsp honey or agave syrup

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 avocado, sliced (for garnish)

1/2 cup crumbled feta or queso fresco (optional)

Lime wedges (for serving)

Marinate the Chicken: In a medium bowl, mix the cumin, smoked paprika, lime juice, honey, salt, and pepper. Add the chicken breasts and ensure they’re fully coated in the marinade. Let them marinate in the fridge for at least 30 minutes (up to 2 hours for more flavor).
