To appreciate these delightful treats fully, it’s essential to understand what cobbler cookies are and how they differ from traditional cookies and cobblers. Cobbler cookies are a hybrid dessert, blending the rich textures of a cookie with the fruity, gooey filling of a cobbler. Unlike traditional cookies that typically stand alone as a single, firm treat, cobbler cookies incorporate fruit and a softer texture, reminiscent of a cobbler’s filling.

Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup fresh peaches, peeled and diced (or canned peaches, drained)

1/2 cup old-fashioned oats

1 cup pecans or walnuts, chopped (optional)

1/2 cup brown sugar for topping

1 tablespoon milk for brushing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (approximately 2-3 minutes).

Incorporate Egg and Vanilla: Add in the egg and vanilla extract, mixing until well combined.

Blend Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

Fold in Peaches, Oats, and Nuts: Gently fold in the diced peaches, oats, and nuts (if using) into the cookie dough until evenly distributed.

Form Cookies: Using a tablespoon or cookie scoop, drop generous spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Add Topping: Sprinkle brown sugar over the tops of the cookie dough before baking. Brush lightly with milk for a shiny finish.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the edges are golden brown, and the centers are set.

Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Enjoy the cookies warm, or store them in an airtight container at room temperature for up to a week. They’re perfect with a glass of milk or a scoop of vanilla ice cream!
