4 ripe peaches, pitted and sliced

8 oz fresh mozzarella cheese, sliced (bocconcini or buffalo mozzarella works best)

2 cups fresh basil leaves

3 tbsp extra virgin olive oil

4 tbsp balsamic glaze (store-bought or homemade)

Salt and freshly cracked black pepper, to taste

Optional: crushed red pepper flakes for a spicy kick

Prep the Ingredients: Start by washing the peaches thoroughly. Cut them in half, remove the pit, and slice them into wedges. Slice the fresh mozzarella into roughly ¼-inch thick rounds.
