Ingredients

For the Patty Melt:

1 lb ground beef (80/20)

4 slices of rye bread

4 slices of Swiss cheese

1 large onion, thinly sliced

2 tbsp butter

Salt and pepper, to taste

For the Secret Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tbsp sweet relish

1 tsp paprika

1/2 tsp garlic powder

Salt and pepper, to taste

Instructions

Prepare the Secret Sauce: In a small bowl, combine the mayonnaise, ketchup, Dijon mustard, sweet relish, paprika, garlic powder, salt, and pepper. Mix well and set aside.

Cook the Onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and season with a pinch of salt. Cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes. Remove from heat and set aside.

Form the Patties: While the onions are caramelizing, divide the ground beef into 4 equal portions and shape them into burger patties. Season both sides with salt and pepper.

Cook the Patties: In the same skillet used for the onions, add another tablespoon of butter and heat over medium-high heat. Add the burger patties and cook for about 3-4 minutes on each side for medium-rare, or until desired doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty, cover the skillet to help melt the cheese.

Assemble the Patty Melts: To assemble, spread a generous layer of the secret sauce on one slice of rye bread. Place a cheeseburger patty on top, followed by a portion of the caramelized onions. Top with another slice of rye bread.

Grill the Sandwiches: Wipe down the skillet and return to medium heat. Add a little butter to the pan and place the assembled sandwiches in the skillet. Grill until the bread is golden brown and crispy, about 3-4 minutes on each side.

Serve: Remove the patty melts from the skillet and slice in half. Serve warm with extra secret sauce on the side for dipping.
