1 loaf of brioche or challah bread, cut into 1-inch cubes

6 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup maple syrup (plus extra for serving)

1/2 cup chopped pecans or walnuts (optional)

Fresh berries for topping (optional)

Instructions
 

Prepare the Bread: Lightly grease a 9x13 inch baking dish. Place the bread cubes in the dish evenly, spreading them out to cover the bottom.

    Mix the Custard: In a large mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

      Combine: Pour the custard mixture evenly over the cubed bread, ensuring all pieces are soaked. Use a spatula to gently push any dry pieces into the liquid.

        Add the Maple Syrup: Drizzle the maple syrup over the top, and if using, sprinkle the chopped nuts.

          Refrigerate: Cover the dish with plastic wrap and refrigerate overnight (or at least for 4 hours) to allow the bread to absorb the custard mixture.

            Preheat Oven: In the morning, preheat your oven to 350°F (175°C).

              Bake: Remove the plastic wrap and bake the casserole for 45-55 minutes, or until the top is golden brown and the custard is set in the middle.

                Serve: Allow it to cool for a few minutes before serving. Serve warm with additional maple syrup and fresh berries on top if desired.
